Abstract

The proximate composition and mineral contents of the Mangrove Oysters, Crassostrea gather from Lagos Lagoon, Nigeria was investigated using standard methods. The results obtained showed that during the dry and wet seasons, Oyster flesh contained 80.15 ± 0.34 and 79.11 ± 0.44 Moisture, 13.1 ± 0.37 and 12.87 ± 0.10 Crude protein, 2.21 ± 0.03 and 2.16 ± 0.05 Crude fat, 2.13 ± 0.03 and 2.08 ± 0.02 Total ash while Nitrogen Free Extract contained 2.43 ± 0.03 and 3.75 ± 0.04 respectively on average.  The minerals present in the flesh of the Mangrove oysters during the wet and dry seasons respectively in average values were: Calcium (91.1mg/100g and 96.6mg/100g), Phosphorus (29.7mg/100g and 33.53mg/100g), Magnesium (12.7mg/100g and 20.03mg/100g), Sodium (46.5mg/100g and 57.17mg/100g) and Manganese (0.09mg/100g and 0.12mg/100g). This study, therefore recommends C. gasar as a good source of the major micro- elements from seafood for proper growth and development of the body.
